This dish is perfect for person who like to manipulate their own taste of the soup and fit quite well for fall/winter season. The core of this dish is the soup. Very very very flexible depending on veggies in your region. What I will be presenting you today is the one I can find in Japan with Japanese vegetables.

Main Ingredients: *ingredients with stars are most preferable*
Soup:
Chicken stocks (or just water)
Pork ribs *****
(basically pork with bone. The bone will keep the soup sweet. I prefer parts with soft bones because you will be able to eat them as well.)
Radish *****
Garlic 2-3 cloves
Coriander:s roots **** (or use celery for substitute)
Optional:
Mushroom (japanese shiitake in this case)
Onions
Carrot
Potato
Broccoli
For Combination part:
White rice (preferable not too soft) ***
Fried garlic (golden brown) ***
Chopped small green onion ***
3 mins boiled eggs
Leaves of celery
Fish sauce
Sugar
Lemon or vinegar
Chili powder
Pepper
Alright, the menu looks like it has so many ingredients but really, those are very easy to find in your local supermarket.
First boil the soup and add in ribs, radish, and other veggies
add in little of fish sauce
We will let this pot set until radish is soft enough (you can see that the color of radish will turn from hard white to transparent)
Start cooking the subsidiaries ingredients aka. fried the garlic or chopped green onions. Make a good use of your waiting time. You can also start cooking the rice !!
After the radish looks soft enough (by this time the meat should be fairly soft too),
prepare the rice.
To me, I love to put basic topping and seasoning first on top of the rice such as sugar, fish sauce, chili powder and egg. Then you can add in the soup until get a bit over the rice.
Topped that with green onions and fried garlic, some black or white pepper would be nice as well. If you do not like spicy, you can just skip the chili part. The basic taste that this dish should taste like is salty, sweets, and sour. Therefore, add in some lemon or vinegar. The powerful taste should be created within the soup. Feel free to add as much as you want if you want the soup to taste either way, or! keep it traditional and do not add any of the flavoring seasoning is also acceptable !!!!
