I have been searching for what to do to this eggplant because I do not want to just stir fries it. Too mainstream !
The eggplant is soft in and crispy out!
Ingredients:
Eggplant
Egg
Sauce:
Tomato
Tomato paste
Garlic
Herbs of choices (I used chopped basil, oregano, and thyme)
Salt
Pepper
Beat the egg!!! That is what you need!!!! hahaha
I prefer my eggplant to shape like this because it can have the maximum space on both side.
I used olive oil. Fries in medium heat until the egg looks cook enough on both side.
Either this color
Or brown like this. It is totally up to you
For the sauce, stir garlic in the left-over oils then add the rest of the ingredients, Tomato, tomato sauce, and spices as much as you want. Taste it for your own preference.
DONE!!!
